Buda Bits

The Buda/Mountain City MOMS Club and the Kyle MOMS Club joined together Monday at The Jumpy Place in Kyle for a mixer to benefit the Ronnie Cruz family. The owners of The Jumpy Place donated $1 from each admission to the family and the MOMS groups contributed food to stock the Cruz family’s pantry. Ronnie Cruz was seriously injured in an automobile accident near Buda Elementary School in May of this year.

Last week Lee Howell walked into the Onion Creek Senior Center and immediately spied a familiar looking couple. Turns out that the couple, Harold and Jere Christian, were neighbors of Howell when they all lived in El Paso. Howell moved to Buda in the 1990s and had lost contact with the Christians. What a surprise to find out that they had settled in Buda in February.

The Grizzles – Randal, Sara, Grant and Garison – were surprised and honored to have Med Kefleazighi visit their home last Sunday evening. Kefleazighi was the 2004 Olympic Silver Medalist Marathon winner and also the New York City Marathon winner in 2009.

Another Hays County Historical Commission video program will be held on Saturday, Nov. 20 at 4 p.m. in the Kunkel Room at Buda Elementary School. The program will feature one time Wimberley artist Buck Winn’s larger than life works from the 1930s through the 1970s. The public is invited to attend this free event.

Peggy Theim prepared the following casserole for a recent covered dish meal at the Onion Creek Senior Citizens Center and several people requested that the recipe be printed in this column.
Spinach Cheese Casserole
• 4 eggs, lightly beaten
• 36 oz. cottage cheese
• 1 lb grated cheddar cheese
• ½ c. flour
• 1 tsp garlic powder
• 1 tsp Lawry’s seasoned salt
• dash black pepper
• 20 oz. chopped spinach, thawed & well-drained
• 1 cup grated Swiss cheese
Mix all ingredients except Swiss cheese and pour into greased 9x13 glass Pyrex dish. Top with Swiss cheese. Bake at 325° for 50 to 60 minutes until top is lightly browned.
