BUDA — The sounds of K-pop music filled downtown Buda on Sunday for the grand opening celebration of the newest Rail Switch food truck, Howdy Boba.
When John Pai, owner of Gotji’s Kitchen and Dibdee, had the opportunity to move Dibdee down the road to Willie’s Joint, he considered selling the extra food truck.
Pai thought, “Instead of selling the truck and the city losing out, why not just expand the options?”
So, he reached out to his friend, John Wilkinson, in hopes that he would consider using the truck for his boba tea business.
Wilkinson, who was working for the city of Buda at the time and hosting pop-up K-pop events regularly, jumped at the opportunity.
Sunday marked one month since the boba truck opened for business.
In celebration, the Howdy Boba team created three special event drinks — Bora Latte, Blue Side and Dream Glow.
Howdy Boba is currently operating Thursday through Sunday from 2 p.m. to 9 p.m.
They hope to expand hours when the weather warms up.
