Salt Lick BBQ owners to open new restaurant n Buda, Dripping Springs

DRIFTWOOD  — Scott Roberts grew up eating fried chicken and potato salad every Sunday at his grandma’s house after church. Now, he’s aiming to recreate this fond memory with Roxie’s, a new restaurant coming to Buda and Dripping Springs.

“My grandmother’s name is Roxanna … You always wanted to be invited over to Aunt Roxie’s to eat after church,” he recalled. “She would serve these meals. Normally, [it would be] fried chicken, chicken fried steaks, her hot rolls, side dishes — usually potato salad, creamed corn and something else — and she would just bring everything out in bowls and platters. It was a wonderful experience.”

His father was a bridge contractor, so, along with staying with Roxie, Roberts was often alone at the house, he explained, leading him to learn how to cook. It was his love of cooking, his grandmother and his aiding in opening another family business in Driftwood — The Salt Lick BBQ — that inspired the idea of another restaurant in the 1990s.

According to Roberts, the Dripping Springs location for Roxie’s was actually acquired first, back in 2020, but, due to the building being historically-zoned, the process is taking a lot longer than anticipated. He stated that the project has been recently approved and will begin to move forward soon, with a hopeful 2026 opening date.

The Buda location at 308 Main St. began putting plans in place for the property approximately a month and a half ago, he said. The owner explained that the vision is to recreate Roxie’s home inside, full of country cooking and comfort.

“It’s really pretty at my grandma’s house in the spring. I think that was her favorite time of the year, so that would be the best,” said Roberts, who has a goal of a spring opening.

In addition to creating the atmosphere of the interior, Roberts revealed that during this trial time of perfecting and testing his grandmother’s recipes, the fried chicken is already his favorite meal on the menu.
