WIMBERLEY — Mima’s Tacos (formerly Mima’s Kitchen) has been serving Wimberley breakfast, tacos and lunch plates for the last 27 years. Now that Mima herself, Helen Sauceda, has decided to retire and pass the business down to her son David and his wife Melissa, the tradition going for generations to come.
“It was kind of like, 'Either you guys take it over or we're probably going to shut it down.' And I was like, 'We can't let that happen,'” David said. “It's just part of Wimberley. So, we couldn't let it go.”
While David joked that his parents are bad at being “retired” and still drop by to work in the restaurant’s kitchen occasionally, he knew that he and his wife owed them a shot at running the business.
David and his wife Melissa opened a restaurant in Canyon Lake, but had always had their sights on expanding in the future. They saw taking over this established business as the perfect way to grow as restaurant owners and involve the entire family.
“I've always said that I wanted to expand. We wanted to open multiple locations basically to take care of our nieces and nephews that would be interested in doing something like this and carrying it on,” David said.
David and Melissa’s two children, Xavier and Tripper, have even expressed interest in doing a few chores around the restaurant to earn some extra cash in the summer.
Since David and Melissa have taken over the business, they have made changes to modernize it. Before, the restaurant was cash-only and has since updated technology and added a more up-to-date point of sale system. They are also currently in the process of repainting the restaurant and giving it a facelift.
“We take cards and everything's automated now. We're updating in that way,” Melissa said. “We've added a couple of dishes to the menu from Canyon Lake, Frito Bandito and the swamp chicken.”
The Saucedas want to continue to stay true to the original restaurant's roots by not changing the menu out of respect for the regulars who have been coming to Mima’s Tacos since it opened its doors in 1995.
“We don't want to drift too far from the original menu,” David said. “Some people just go crazy with the menu and then everything starts to blend and then, quality goes down. We don't want to do all that.”
David claims that Mima’s Tacos was one of the first in South Central Texas to serve breakfast tacos in the ‘90s.
With the updates to Mima’s Tacos over the past year, the Sauceda family is ready to take on the task of owning their second restaurant.
“We're excited and we're grateful to our community for hanging in there with us through all the changes and everything that's going on,” Melissa said. “The best thing is coming to work every day and seeing those locals that have been coming since we opened in 1995.”
