Meat & Drink restaurant opens in Wimberley
A new restaurant has made its way to Wimberley, in the heart of the downtown square.
Located at 13904 Ranch Road 12, Suite 4, next to The Let Go and Dos Olivos Market, Meat & Drink opened during the first week of November to serve as a place for people to relax and unwind, pick up dinner for their family and enjoy live music. The eatery offers various options, including family-style smoked chicken meals, sausages, chili, salads and chips and queso, along with a full bar with local beer, wine and frozen drinks and margaritas — which are available to take home or enjoy under the heritage oak tree.
“We have a little bitty stage like right under the oak tree right by us and we want to have live music pretty regularly once we get our feet under us. That's why the ampersand [in our logo] is a treble clef,” explained owner Harlan Scott. “We want to have live music at least on the weekends for sure and then maybe a night just for the locals, like Monday or Tuesday … We hope to do a lot of online ordering, pick up and take home kind of thing, like, feed your family.” Scott also operates other establishments, including Industry locations in Austin and San Marcos. The idea for Meat & Drink sparked when a colleague and good friend of his, Russ Whisler, approached Scott with the 350 square-foot space that he had available in a little corner of downtown Wimberley. He and his wife were also investors and a part of Scott’s other restaurant establishments.
“Every time Russ has leased out his space in Wimberley to a new tenant, he's always kind of come to me first and told me about it and kind of bounced ideas off me. I've always felt like if I had had the time and money, the opportunity was always there for me to open a restaurant. I just could never wrap my mind around it because I've been trying to keep these Industry restaurants going and just have my hands full,” Scott explained.
Whisler also originated the idea to “sling some little meats on a stick” because the space is smaller than most restaurants.
While he has opened the new restaurant in Wimberley, Scott still maintains a connection with the other communities he is involved in, as he utilizes the prep kitchen and smoker that he has at the Industry location in San Marcos to craft the recipes and dishes he serves at Meat & Drink. However, Meat & Drink is still its own concept, according to Scott.
“It's a beautiful 18-minute drive. I don't know anyone that doesn't go to Wimberley and be like, ‘Man, I wish I could do business or live here’ because it's idyllic. The people are wonderful. There is tons of tourist traffic and locals,” Scott said.
